What humidity control actually involves
Winter heating drives indoor relative humidity into the twenties, which is why you get static shocks, cracked trim, split hardwood, and sinuses that never settle. A whole-home humidifier plumbed into the supply plenum holds it in the 35–45% range. The summer problem is the reverse — a cool but clammy house, condensation on windows, a basement that smells like a basement — and that's a job for a dedicated dehumidifier, because an oversized AC will not solve it.

Around 35–40% is the usual target. Higher than that in deep cold and you'll get condensation on the windows, which becomes a mould problem on the sills.
It does, as a side effect, and a correctly sized one does it well. An oversized AC cools so fast it shuts off before pulling much moisture out — which is exactly why the house can be cold and clammy at the same time.
